Dry and Delicious: Recipes Tailored for CKD Patients

The main pain point of those who are suffering from chronic kidney disease patient is to manage their fluids as well as their diet, so recipes in dry forms are quite needful to maintain water in their daily life and also their diet where there are restrictions in their foods. Here I will share 5 different recipes.

Rava Uttapam :

Recipes no 1- Rava Uttapam

These crispy  & spongy pancakes are famous in South India. Uttapam can be prepared similarly to dosa batter but the only point of difference is that uttapam is thicker than dosa. It is easy to prepare for breakfast and evening snacks.

Ingredient :

  • Suji or Rava
  • Curd
  •  Chopped carrots
  • Chopped Chillies
  • Chopped Onion
  • Salt
  • Oil 

Procedure :

  1. Mix suji or rava & rice flour with water & keep it for 30 min, mixture should be thick in consistency.
  2. In the meantime, chop the vegetables into small pieces & keep them ready.
  3. After 30 min, add all other ingredients like onion, chili, and carrot into that batter & mix well.
  4. Heat the frying pan with ½ tsp oil, pour  batter onto it & spread it out in a circular manner evenly to have a thick even consistency
  5. Fry it finely until it turns light golden brown & serve hot with a sprinkle of salt .

Garlic Coriander Kulcha:

This leavened Indian flatbread is famous in Delhi, Amritsar &  Punjab. This is a prominent north Indian breakfast that is expected to have a higher content of calories that provides that right amount of energy to start the day, there are different variations of kulcha available, try this garlic coriander Kulcha

Ingredients :

  • Whole wheat flour  
  • Salt
  • Sugar  
  • Curd
  • Chopped Garlic  
  • Coriander Leaves
  • Oil

Procedure:

  1. Mix atta, pinch of salt & sugar in a bowl, make a well in the center.
  2. Add curd & a little water & then knead it well, making a smooth & soft dough. Allow it to rest for 2 hours.
  3. Lightly Knead the leavened dough, make a small ball & roll it.
  4. Sprinkle chopped garlic & coriander leaves & again roll it.
  5. Heat oil in the pan & place the kulcha on it.
  6. Cook both sides well until it gets golden brown.
  7. Serve hot after soaking excess oil with tissue paper.

Kacha Aamer Sandesh:

Mango is a lavish fruit that is liked by everyone, but there is a big doubt about mango among patients. For those with a sweet tooth, the Kacha Amer Sondesh presents a mango-infused dessert that is not only safe for diabetics but also a treat for CKD patients.

  • 1 cup semolina
  • ½  Cup  Sugar or stavia.  
  • 2 tsp ghee 
  • 1 cup double-toned milk
  • 1-2 pcs cardamom
  • 1-2 pcs nuts paste

Preparation :

  1. Firstly peel a mango cut into pieces then boil & soak the mango in a plain muslin cloth & make a paste.
  2. Add ghee to the frying pan &  saute the suji until it becomes brown, then add powder milk to the suji, after that add sugar & melt that mixture.
  3. In that mixture add green mango paste & mix well properly.
  4. Then add cardamom, again mix it well until it becomes a dough-like texture.
  5. After that place on a plate & freeze it for 2 hours. 
  6. After 2 Hours of freezing, garnished with nut paste.  Cut into pieces & serve it. 

Taco’s :

Taco is a Mexican recipe stuffed with vegetables, chicken & paneer, Tofu, etc. It can be an ideal tiffin choice because it gives an almost balanced amount of protein, fiber, carbohydrate, fat, vitamins & minerals. It’s also dry in texture & fulfills the appetite of kidney patients.

Ingredient :

  • Refined Flour 
  • Cooked minced chicken/paneer
  • Cucumber
  • Capsicum
  • Carrot
  • Lime juice
  • Black pepper
  • Pinch of salt
  • Tomato
  • Cabbage / Chinese  cabbage
  • Lettuce
  • Greek yogurt
  • Onion
  • Green chilli
  • Olive oil
  • Coriander leaves

Preparation :

For Stuffing :

  1. First in a Frying pan,  add olive oil & following vegetables like capsicum, onion, green chilies, carrot, and cabbage & saute well.
  2. Then in another frying pan fry the minced chicken or crumble the paneer.
  3. After that mix the all vegetables & fried chicken or paneer.
  4. Add black pepper & season with salt, lime juice & chopped coriander, and greek yogurt.

For  Tortilla  :   

           Make a dough & roll it on to make a roti in the low flame in the oven.

Final preparation:                                   

  1. Add the lettuce to the roti & all the mixed & seasoned vegetables.
  2. Then Add extra virgin olive oil.
  3. Then heat both sides & serve.

Low salt grilled bread: 

 Roti’s are majorly consumed in India, there are also wide ranges of varieties of rotis are available in India there are unique recipes has been cooked & good for kidney patients. It can give a fulfillment of appetite.

Ingredient :

  • Active dry yeast.
  • A ½ cup of  warm water
  • A  ¾  cup Double-toned milk, heated to simmer.
  •  2 tsp normal sugar and 2 tsp of oil.
  • 3 to 3 ½ cups all-purpose flour.

Preparations:

  1. First, dissolve the yeast in warm water.
  2. Then mix sugar, milk, and oil together.
  3. After that 1 ½ cups of yeast & flour mixture & stir well.
  4. Add the remaining flour to make the dough soft.
  5. Knead the surface of the dough for about 9-10  min until it becomes smooth.
  6. Then place the dough on a lightly oiled plate, covered with plastic wrap & placed in a warm corner in the kitchen.
  7. Check the dough after 30-35 min.
  8. Punch down the dough to remove all air bubbles & shape the dough into 7-8 inches.
  9.  Roll that dough & put it in the tawa until it becomes golden.
  10. This takes 3-4 approx.
  11. Lastly, serve it with sabzi.
